Gluten Free Vegan Protein Brownies

I’m so excited to share this super simple and SUPER delicious Gluten Free Vegan Protein brownie recipe with you today.

I’ve been wanting to get some extra protein into my diet as I train for my marathon in October and protein-enhanced snacks seem like a good way to sneak it in! The recipe is a win because A) it only uses 6 basic ingredients and B) it only uses one bowl!

Ingredients:

3 overripe bananas – mashed
4 tablespoons cacao powder
4 tablespoons protein powder*
6 tablespoons peanut butter
1 tablespoon honey or zero syrup*
Splash/tablespoon of oat mylk or nut mylk.

Pinch and sprinkle of coarse salt.

(Optional: Dark chocolate chips if you want to be EXTRA)

*I used the Protein Works Vegan Protein powder in Vegan Millionaire’s flavour (I’m interested to try the recipe again using the chocolate flavour!)
*I also used a zero syrup from the protein works instead of honey.

>> I bought the zero syrup on a whim when I was buying the protein powder (as I was curious about how this sweet syrup could be ZERO calories and wanted to try it! It worked really well in the baking that I’ve done with it and also in smoothies. We tried it straight-up on pancakes the other day and I’m not entirely convinced on the texture of it – but it is FAB for baking! You could use honey or regular syrup instead!

METHOD:

Preheat oven to 180 C
Mix all your ingredients together with a pinch of salt.

Ingredient reminder:
3 overripe bananas – mashed

4 tablespoons protein powder

Add your dark chocolate chips if you want to be EXTRA. (You do)

Line a greased tin with grease proof paper. (To be fair, I don’t think you have to actually do both of those things, but I do, because I must have trust issues!)

Spoon your mixture into the extra-greased tray.

Sprinkle some more coarse salt over the top of your brownie batter.

Put it into the oven for 20 – 25 mins.

Be closer to the 20 min mark if you want the brownies a bit more fudgey/gooey. They will still be slightly undercooked slightly when you take them out!

Turn over the tin and gently cup into squares while it’s still warm – like the first image I shared! When they are cooled enough break them apart!

Enjoy with your favourite hot drink!

These are obviously not super sickly sweet “traditional brownies” (if you want that – go bake that!) these are a really great gluten-free vegan alternative with an extra hit of protein! I’ve really loved snacking on these over the last few weeks!

They do keep quite well if you put them in the fridge in an airtight container!
